What makes Assamé "raw" and "unfiltered"?
Assamé Kombucha is brewed in small batches and is never pasteurized or heavily processed. Being raw and unfiltered means it retains the naturally occurring live cultures created during fermentation. This preserves the authentic taste, natural carbonation, and beneficial compounds that are typically removed in filtered or shelf-stable drinks.
How is Assamé Kombucha so low in sugar?
During fermentation, the live cultures consume most of the sugar added at the start of the brewing process. While others take the short fermentation route which results in high residual sugars, we take the long and slow route of natural fermentation. As a result, very little sugar remains in the final drink at the completion of the fermentation. Assamé Kombucha also uses thoughtful flavor balancing so you get a refreshing taste without unnecessary sweetness.
Does Assamé Kombucha contain alcohol?
Our Kombucha is crafted using a slow, controlled fermentation process designed to prevent alcohol formation. As a result, it contains no alcohol.

Assamé sources its tea leaves directly from local tea gardens in Assam, a region globally known for its rich tea heritage. This ensures authentic flavour, quality, and a strong connection to the land where the tea is grown.
How should I store my Kombucha ?
Assamé Kombucha should be stored refrigerated at all times. Since it is a live, raw beverage, refrigeration helps slow further fermentation and keeps the flavor and carbonation just right.
